Stylish and trend-setting with an ambiance worthy of New York, Chambar's patrons come here to see and to be seen, as well as to enjoy a menu that reflects modern Belgian cuisine using the freshest of ingredients. Situated at the crossroads of Gastown, Chinatown, and the downtown core, Chambar is steps away from the Skytrain, GM Place, BC Place, as well as the Queen Elizabeth Theatre. Fashionistas will be impressed with the modern decor and furnishings which contrast well with its historical background.
The menu is simple and succinct, but each dish is packed with a myriad of flavours and textures which compliment its artistic presentation. Starting with poutine a la Belge, garnished with Roquefort cheese and a balsamic reduction, I paired this appetizer with delightful concoction from the bar, mine was named Tin Tin & the Nashi Pear - no simple martinis here, though I'm sure they would gladly oblige. Portions are generous and our well built server even admitted that he is unable to finish his portions. Chambar is known for their moule frite, a scrumptious combination of mussels and fries, but I was wise to make the Coquotte my main event. The tangine deaziz a leagneau fell off the bone and melted in my mouth, subtly alluding to North African influence. The bouillabaisse was deceptively small but dense. I thought one of my dinner companions was having dessert before I realized that the magret de canard aux cerise was actually a main course. I could continue... but that would be giving too much away. The selection of wines and Belgian beers is extensive and nearly everyone will be able to find a suitable accompaniment for each course. The creative bar staff are willing to shake up pretty much any drink that you desire.
When asked about special requests, our server was quite certain that the kitchen is flexible with most dietary needs. This was confirmed by the manager who assured us that those with special dietary needs could be accommodated easily, the only possible challenge being the selection of spices, in case of a sensitivity to a certain spice. However, the manager emphasized that it is communication, as always, that is the key to ensuring that the kitchen provides a suitable meal for all their patrons. Although the menu does not highlight heart healthy or low carb alternatives, it does offer ocean environment friendly seafood. The wait staff are professional, personable and discreet - and very easy on the eyes.
A traditional tarte tatin served in a non traditional way as well as the mousse au chocolat Belge provided our palates with a decadent finish to a most enjoyable evening. Be assured that those who graced our table will soon return to Chambar to indulge and to be seen.
