Rustic Soya Maple Tofu Kebabs

Rustic Soya Maple Tofu Kebabs
1 pound extra firm tofu
Green, yellow, and red peppers (one or two of each), cut into chunks
1 Red Onion, cut into chunks
1 zucchini cut into chunks
10-15 mushrooms, sliced
Simply West Coast Rustic Soya Maple Glaze™
8 skewers (bamboo or metal)

Instructions
- Slice tofu lengthwise in half. Allow the tofu to drain for about 30 minutes, until it is firm and dry.
- Cut the tofu into cubes and place in a dish.
- Pour Simply West Coast Rustic Soya Maple Glaze™ over tofu and marinate for 2-3 hours.
- Remove tofu from marinade, and drain well while saving any liquid.
- Add vegetables to the remaining Soya Maple Glaze.
- Skewer the tofu and veggies. Brush kebabs with the rest of the remaining sauce.
- Remember, if you are using bamboo skewers, to soak skewers well ahead of time.
- Heat grill to medium high and cook skewers on each side for 3-4 minutes, or until tofu is golden and vegetables are softened.
