Grilled Copper River Salmon with lobster potato puree, braised spinach, maple carrots, charred pineapple relish

6 oz Copper River Salmon Fillet
2 oz fresh Lobster Meat
2 Russet Potato
1 tsp Unsalted Butter
25 ml Homogenized Milk
1 cup Fresh Spinach
1 tblsp Olive Oil
1 tblsp Chicken Broth
2 Baby Carrots
1 tsp Maple Syrup
1/4 Pineapple
1 sprig Cilantro ( rough chop )
2 Shallots ( sliced thin )
1 tsp Honey
