Pickled Pig Cocktail

Pickled Pig Cocktail. Serves 1
2 oz (4 tbsp/60 ml) Hendrick’s Gin
1/2 oz (1 tbsp/15 ml) red wine vinegar infused with bacon
1/2 oz (1 tbsp/15 ml) cucumber simple syrup
2 drops of rose water
Dried rose petal and small piece of crispy bacon for garnish

Instructions
- Stir ingredients and serve in a chilled cocktail coupe. Garnish with a dried rose petal and small pieces of crispy bacon.
Cucumber syrup can simply be made by extracting cucumber juice and adding it to traditional simple syrup, which is made by combining equal parts sugar and boiling water.
