Persimmon Sorbet
500g persimmon pulp
500g sugar
750 ml water
60 ml lemon juice
1 egg white

Instructions
- Bring fruit, sugar and water to the boil
- Blend with emersion blender
- Strain and cool
- Add lemon juice and egg white
- Freeze using sorbetiere
