Modest Miso Scallops and Soba

Modest Miso Scallops and Soba
1 tablespoon chopped ginger root
1 tablespoon garlic
vegetable oil
300 g soba noodles (or noodle of preference)
35 asparagus spears
About 15-20 good sized scallops
Pinch of salt and pepper
1/2 cup shiitake mushrooms, sliced
3 scallions, chopped

Instructions
- Boil noodles and rinse with cold water, set aside.
- Heat 2-3 tbsp of oil in a skillet over medium heat.
- Stir fry shitake mushrooms and asparagus with ginger for 3 to 5 minutes and set aside.
- Add another healthy splash of oil to the same skillet, and grill the scallops for about 1-2 minutes per side, until cooked.
- Place noodles on plates, top with asparagus, shitake, and scallops, and drizzle with Simply West Coast Modest Miso Vinaigrette.
- Garnish with scallions and serve!
