Lemon Squares

Lemon Squares. Makes 20 squares.
CRUST
1 cup unsalted butter
1/2 cup sugar
1/2 tsp salt
2 cups all-purpose flour
LEMON FILLING
6 eggs, beaten
1 cup sugar
3/4 cup fresh lemon juice (from approx. 3 lemons)
1 Tbsp lemon zest (from approx. 1 lemon)
1/4 cup unsalted butter, melted
1/4 cup all-purpose flour
1/4 tsp salt

Instructions
- Oven Temperature 350°F
- Baking Time 40 minutes
- Equipment 13- x 9-inch baking dish, food processor or stand mixer with paddle attachment
- Preheat oven to 350°F. Lightly grease pan.
- For crust, blend butter, sugar, salt and flour together in food processor or stand mixer until mixture forms soft crumbs.
- Reserve 1/4 cup of crust mixture and press remaining mixture into bottom of pan.
- Bake crust in preheated oven for 20 minutes.
- In large bowl, whisk lemon filling ingredients together. Pour onto baked crust in pan.
- Bake for 15 minutes longer.
- Sprinkle with 1/4 cup reserved crust mixture. Return to oven and bake 5 minutes longer.
- Cool on wire rack.
Kitchen Gossip
Lemon squares are loved by all. To dress them up, serve on a plate with fresh berries.
