Grilled Quail with Pistachio and Pomegranate

Grilled Quail with Pistachio and Pomegranate: Serves 4
4 quail, cut through backbone and flattened out
sea salt and freshly ground pepper
Marinade
1⁄2 garlic clove, minced
1 tsp (5 mL) cinnamon
1 tsp (5 mL) cumin
1⁄2 onion, finely chopped
3 Tbsp (45 mL) pomegranate molasses
juice from half a lime
Sauce
1 cup (250 mL) bacon, diced
1⁄2 garlic clove, minced
1⁄4 cup (60 mL) pomegranate molasses
1⁄2 cup (125 mL) pistachios, whole
sea salt and freshly ground pepper to taste
Garnish
Arugula leaves

Instructions
- In a large bowl, prepare marinade and toss to combine
- Season each quail with salt and pepper and place in marinade
- Cover and refrigerate for at least 1 hour and up to 24 hours
- For the sauce, sauté bacon in a pan until crispy
- Remove all the fat drippings except for 1 Tbsp (15 mL)
- Add remaining ingredients and heat through
- Grill quail over medium-high heat for about 7 minutes each side, or until juices run clear
- Serve on a bed of arugula leaves with sauce drizzled on top.
Quail belongs to a family of game birds that were vital to the survival of both native peoples and early settlers. You can see quail both in the wild and on signage for local businesses throughout the province’s Okanagan region. While you may see many of these birds running across the roads, most of B.C.’s game birds used for food consumption are raised in captivity. Known for their rich, moist meat, quail are the most popular of the small-game birds, with more than 350,000 being produced annually. Other game birds being raised include pheasants, partridge, squab and silkies. While quail are frequently offered on the menus of upscale restaurants, they are also available for the home cook in specialty shops and meat markets.
Tip:
Pomegranate molasses is a syrup made from cooked-down pomegranate juice. It can be found in Middle Eastern stores.
