White Cannellini Bean and Pancetta Soup

White Cannellini Bean and Pancetta Soup

1 cup White cannellini beans (cooked)
100 grams Pancetta (roughly chopped)
1/2 cup White onion (diced)
1/2 cup Celery (diced)
1.5 liters Chicken stock
2 cloves Garlic (crushed)
30 ml Olive oil
to taste Salt and pepper
1 tble sp Butter (big cube)

Instructions:
- sweat off the pancetta, garlic, celery and onion in the olive oil until tender
- Add the chicken stock and slowly bring to simmer
- Add the white beans and bring to a simmer, cook for 7 minutes
- Add the butter and stir until melted, taste and finish with salt and pepper
