Cibo Trattoria’s Fall Lineup of Monthly Regional Dinners

With the season of golden trees, crisp cool air and new fall fashions approaching, so are the next three Regional Dinners at Vancouver’s very own internationally acclaimed and award-winning Cibo Trattoria.

The Regional Dinner Series at Cibo have really become popular with true Italian cooking enthusiasts. Each dinner is carefully planned and prepared monthly by Executive Chef Neil Taylor to cater to a specific geographical region in Italy. Each four course dinner represents the culture, ingredients and rich history of traditional meals from the region highlighted for the month. There is also an exquisite wine pairing option each month personally selected by Cibo’s General Manager and Sommelier, David Fert.

In September, Cibo features the Tuscany Dinner on Wednesday, September 21st from 5pm into the late evening. Tuscany marks the divide between the richer European style cooking of the North and the simpler, lighter, more Mediterranean style cooking of the south. Tuscan olive oil is a defining factor along with the beef and chickens that are produced here, being some of the best in Italy. Pasta is less prominent in Tuscan cuisine, being replaced by bread based soups. Vegetables are exceptional especially artichokes, cannellini beans, borlotti beans, zucchini, chard and tomatoes.

Chicken liver Toscana with housemade pickles and bruschetta

“Pici”- Tuscan style spaghetti with pork ragu, san marzano tomatoes, chil, basil and pecorino

Roast chicken with “panzanelle salad”- heirloom tomatoes, roast peppers,
walla walla onions, celery, anchovy, bread and chianti vinegar

Roast local peaches, almonds, vin santo and crème fraiche

October’s Regional Dinner highlights beautiful Umbria. This naturally beautiful landlocked region of central Italy is rich in history and culture.  It is known for its meat and game, especially nut fed pork, lamb, wild boar, hare and game birds. Umbrian fresh and cured pork products are renowned throughout Italy with porchetta (roasted stuffed pig) originating here.  Legendary black truffles from Norcia, wild trout from the River Nera, lentils from Castelluccio and excellent sheep’s milk pecorino are some of the regions notable foodstuffs. Cibo’s Umbria Dinner will be help Wednesday October 12th  from 5pm into the late evening. The menu will be finalized and revealed closer to the date in order to use the freshest ingredients in-season.

The Fall finale will be the Lombardy Dinner on Wednesday, November 9th from 5pm into the late evening. Stretching from the Alps in the north to the River Po in the south this region has a rich in agriculture and cuisine.  Romans, Lombards, Spanish, Austrians and French have all ruled here in the past, each group influencing the cuisine. Agriculturally, Lombardy is grain country.  Rice used to make risotto is flavored with all manner of ingredients, including oxtail, marrow, pumpkin, sausage, quail, lake fish and frogs that abound in the rice paddies of the Po Valley.  Some of Italy’s most renowned cheese are produced here including; Gorgonzola, Grana Padano, Mascarpone, Robiola and Tallegio.  A large proportion of Italy’s fruit is grown in Lombardy including cherries, pears, figs and apricots.

6TH ANNUAL WELL SEASONED BBQ ON THE BYPASS IS SET TO SIZZLE ON SEPTEMBER 18TH

Greater Vancouver’s largest BBQ competition & free public event will offer more competitions, barbequed food & entertainment

The countdown is on to the 6th annual Well Seasoned BBQ on the Bypass on Sunday, September 18th from 10 am to 4 pm at 20771 Langley Bypass in Langley, British Columbia. With just three weeks to go, organizers are anticipating this will be another record year with thousands of attendees and over one hundred competitors. Highlights of the 2011 event will be The JD Farms Ultimate Burger Challenge, The Great B.C. Bake Off, new concessions, BBQ samples, and the crowning of BBQ champions in various categories.

New this year is The JD Farms Ultimate Burger Challenge, a competition where teams will be rated and ranked on their outstanding hamburger creations. 2011 and will also mark the return of The Great B.C. Bake Off, a popular amateur pie and tart baking competition open to the public. In addition, the event will feature an expanded concession area, marketplace, and a children’s area hosted by The Great Escape.

The event will be emceed by food columnist and culinary instructor, Chef Dez, while the esteemed panel of judges will include celebrity chef, Anthony Sedlak; Global TV anchor, Steve Darling; CityTV anchor, Dawn Chubai; Grant Sigaty, news anchor at STAR FM; and City of Langley Mayor Peter Fassbender. Competitors will include last year’s reigning BBQ champions, Brian and Corrine Misko from House of Q, in addition to teams from throughout Western Canada and the Pacific Northwest. The BBQ on the Bypass house band, OS5 will perform throughout the day along with special guest, country music artist, Karen Lee Batten. The event will also feature a marketplace with sponsor displays, activities, prizes; plus concessions and BBQ food samples provided by the teams.

The Well Seasoned BBQ On The Bypass is a competition based event where BBQ teams vie for cash prizes in the categories of chicken, ribs, beef brisket and pork butt and a chef’s choice category. The team with the highest overall points will be crowned the BBQ on the Bypass Grand Champion and will win up to $5,000 in cash prizes. The BBQ on the Bypass is also the site of the B.C. BBQ Championship and the last competition in a series where the team with the most points in all five provincial competitions will be crowned the BC BBQ Champion, earning the David Valjasic Cup.

Approximately 30 teams are expected to compete at this year’s event including House of Q and Rub My Butt from Surrey; Mad Cow, Porkaholics and Helluva Q from Langley; Whistler’s BBQ Bob & the Eh Team; and Lynn Valley Butts, Smoke N Bones BBQ and Bad Ass BBQ from North Vancouver and many more. The Well Seasoned BBQ On The Bypass is a not-for-profit event designed to introduce more people to “real BBQ” while providing competitive teams with an opportunity to hone their skills. Italy’s Amarone Families Visit Vancouver

On Thursday October 6 2011, Vancouverites will have an opportunity to meet the principals from Italy’s Amarone Families wineries at a gala dinner hosted by the Vancouver Playhouse International Wine Festival. The evening will include a five-course dinner, wines, a silent auction and a chance to meet some of the most important players in Italy’s wine industry.

The dinner at Rosewood Hotel Georgia will feature principals from 12 Amarone wineries:  Allegrini, Begali, Brigaldara, Masi, Musella, Nicolis, Speri, Tedeschi, Tenuta Sant’Antonio, Tommasi, Venturini and Zenato.

Pink Salmon Festival: August 28th, 2011

The 2011 festival will be modelled on the inaugural Pink Salmon Festival held in 2009 that drew 3,000 people. Attendees will be treated to barbecued pink salmon donated by Canfisco and prepared by premier Vancouver chefs. The festival is organized by the Pacific Salmon Foundation.

What: A day of culinary pleasure, entertainment and family fun to celebrate pink salmon, the most undervalued, yet most sustainable, of Pacific salmon species.

When: Sunday, August 28, 2011, Noon to 5:00 p.m.

Where: Vancouver’s Hadden Park, 1905 Ogden Avenue (at Cypress): Home of the Vancouver Maritime Museum on the sparkling waters of English Bay, Hadden Park is filled with fascinating bits of Vancouver history, with historic vessels often docking in harbour.

Why:The festival will take place amidst what is expected to be a record return of pink salmon, the most abundant and sustainable species of Pacific salmon. The fish return in large numbers allowing for harvesting for human consumption without damaging the overall health of the species and the plants and animals that depend on them for sustenance.

Eat! Vancouver Food + Cooking Festival 2013 will be held May 24th 2pm to 9pm, May 25th 10am to 9pm, May 26th 10am to 5pm at BC Place Stadium.
