Pacific Institute of Culinary Arts Welcomes Pastry Chef Toshitsuga Hara

Former two decade long Executive Pastry Chef for Vancouver’s illustrious Pan Pacific Hotel, Chef Toshitsuga (Ted) Hara is a welcome addition to Pacific Institute of Culinary Arts’ (PICA) Professional Baking & Pastry Arts program.  “We could not have found a better combination of experience, passion and prestige to complement our existing team of internationally trained faculty members” adds Executive Chef and newly elected Chefs’ Table Society of BC President, Julian Bond.

Chef Hara was born and apprenticed in Kyoto, Japan where for 15 years he successfully owned an acclaimed pastry & café.  Horizon before him Chef Hara relocated to Canada where soon after he graced the kitchens of Vancouver’s Pan Pacific Hotel to oversee the pastry operations for this 504-room Five Diamond Hotel and Five Diamond restaurant.  Successfully managing the pastry department of one of the largest hotel banquet facilities with 42,000 sq/ft of catering venues and 20 function rooms Chef Hara was still hungry for a challenge.

Chef Hara then went on to represent Canada in numerous international pastry competitions as well as, an appearance at the acclaimed James Beard House, NYC.  Competing aside, Chef Hara began to lend his industry prowess as a judge and mentor for the World Pastry Championship, the American Culinary Classic & the World Culinary Olympics as the Canadian National Team Pastry coach.

Passionate about sharing his knowledge and experience, Chef Hara recently joined PICA as a full-time Baking & Pastry Arts Instructor because in his words, “Pastry is a wonderful and creative art. Taste, aesthetic and overall wow factor can be achieved freely if you have the passion and proper foundation of skills.  Pacific Institute of Culinary Arts is your play ground to start creating your dream. I love contemporary art, fashion and architecture which is expressed in my artful pastry creations. On the ground floor is a warm red and gold hued pasta kitchen called Cuoco, which means cook in Italian. The second floor has the bright and lively Brave Horse Tavern centered around a pretzel oven and 26 taps. On the eastern interior is a small Tibetan dumpling café called Ting Momo.

You are invited to taste and respond on a comment card. The architectural plans and early photos will be on display. Tastings will be held on 3 nights in March with each night dedicated to one restaurant.

To mark its 33rd year the 2011 Vancouver Playhouse International Wine Festival will welcome some of the most progressive winemakers and winery leaders in the world. From pouring at the International Festival Tasting to hosting events, these vin-pioneers are set to satisfy curious neophytes and seasoned oenophiles with personal, one-on-one meet and greets. Appearances from the following wine world celebrities are just a few reasons to partake in the week long festivities.

DIVA(S) AT THE MET

What’s it like to be a woman in the grape trade? Vancouver-based sommelier and Playhouse Wine Festival host Daenna Van Mulligen (alias WineDiva), who has a decade-long list of wine tasting critiques in her purse, will be introducing an international group of female winemakers, proprietors and industry headmistresses at Diva(s) at the Met. Speakers include Ann Sperling, of British Columbia’s 86-year-old Sperling Vineyards; Mary Ann Yewen, Director of Freixenet, one of the top selling sparkling wines on the planet; and Mariola Varona, the North American Export Director of the multi-award-winning Bodegas Martín Códax, specializing in the Albariño grape. Among other dignitaries, these wine queens will dish on the coveted wines they represent, as well as the stories behind their successes as principal businesswomen in a traditionally male dominated industry.

With direction from the biggest wine diva of them all, attendees will also enjoy a selection of small bites prepared by Diva at the Met’s Executive Chef Quang Dang. THE LEGACY OF A SPANISH VISIONARY: MIGUEL TORRES

When it comes to describing Spanish wine icon Miguel A. Torres, “legendary” is an understatement. Arguably one of the most important families in the history of Spanish wine, Legacy of a Visionary is the pièce de résistance of Festival week. Miguel is the fourth generation of Torres to preside over the acclaimed and centuries-old Miguel Torres Winery, a published author several times over, Decanter magazine’s 2002 Man of the Year and Wine International magazine’s 2005 Personality of the Year.

Moderator Anthony Gismondi will be discussing Miguel’s influence and the Penedès region winery, while guests are guided through a rare and diverse selection of wines from the Torres wineries in Spain, Chile and California.

One of the most anticipated events of the Festival, Legacy of a Visionary will held on Thursday, March 31st at VCC East, meeting room 8, 999 Canada Place Way, from 5:00 - 6:45 pm.

GOOD GRACIOUS GRENACHE!

Join house wine’s Michelle Bouffard and Michaela Morris as they explore the grandeur and the many guises of Grenache. This lesser known, but surprisingly common grape, was baptized as “Garnacha” by the Spaniards and has ties to cheerful rosés, fuller-bodied reds (think: Châteauneuf-du-Pape, Priorato and Rioja), and lusciously sweet elixirs. Prepare to taste some of its finest expressions hailing from Spain, France, California and Australia. Good Gracious Grenache! will be held on Saturday, April 2nd, at VCC East, meeting room 1, 999 Canada Place Way, from 3:00 – 4:45 pm.

MEET YOUR MATCH

Finding the perfect wine is like finding the perfect partner, it takes the right introduction at the right time. Oeno-enthusiasts are promised that proverbial “spark” at this year’s much anticipated, Meet Your Match event. Chaperoned by master wine matchmaker and acclaimed wine writer, Anthony Gismondi, sippers will be invited to get up close and personal with the vinestars of the wine biz. These fascinating international winery principals are set to lead tasters first-hand through the intimate secrets of some of the world’s most outstanding wines and wineries. Presented in a format that allows small groups direct and personal interaction with Festival celebrities, each group will have about 6 minutes to taste the producer’s wine, hear their story and ask questions.

Included in the VIP list is proprietor Telmo Rodriguez, one of Spain’s most celebrated and animated winemakers. Telmo sought out forgotten vineyards for the purpose of recovery and cultivation of abandoned indigenous vines to rave reviews, consistently scoring 90+ points. Alvaro Palacios, widely considered to be propelling Spanish wine into the modern era, acquired his first vineyard, Finca Dofí, in 1990, and will be pouring cellared wines for Meet Your Match guests.

Known for his outstanding Syrahs and Cabernets, South African winemaker Marc Kent of Boekenhoutskloof will be returning to the Festival with his much lauded The Journeyman Franschhoek 2005. David Guimaraens, a sixth generation to Portugal’s Taylor Fladgate and Fonseca, is considered something of a winemaking genius at the international table. In December 2010, David released one of the world’s oldest ports, SCION, to a limited group of collectors and connoisseurs, which at 155 years old, may be one of the only wines to have survived the pre-Phylloxera era.

If these wine experts haven’t already satiated your taste buds, the event will also see Stefano Leone, International Export Director of Antinori; Louis Moreau, owner and winemaker of France’s Domaine Louis Moreau; British Colombia’s own Anthony von Mandl of Mission Hill Family Estate; Cristiano Van Zeller of Portugal’s Quinta do Vale Dona Maria; Californian winemaker Rick Sayre of Rodney Strong; Rupert Symington, Joint Managing Director of Symington Graham’s Port; and David Paterson of BC’s Tantalus Vineyards. Meet Your Match is scheduled on Saturday, April 2nd at VCC East, meeting room 8, 999 Canada Place Way, from 5:00 – 6:45 pm.

The Vancouver Playhouse International Wine Festival, Canada’s premier wine show, runs from March 28th to April 3rd, 2011. March Concerts at the VSO

Vancouver, BC - The month of March at the VSO features an exciting array of concerts for every musical taste, from Jazz classics to fun concerts for kids, and Celtic tunes to classical music stars.

The month begins with the popular afternoon series, Pacific Arbour Tea and Trumpets. VSO Concertmaster Dale Barltrop leads the orchestra, and Christopher Gaze narrates, in a concert featuring the beauty of the Baroque era with the music of Telemann and Corelli, and excerpts from Vivaldi’s Four Seasons.

Next up is a VSO Pops concert with John McDermott and his unique and beloved blend of Celtic and folk genres. VSO Principal Pops Conductor Jeff Tyzik leads the orchestra in this very special presentation.

Children’s entertainers Dandi Productions bring Roald Dahl’s story of Little Red Riding Hood to life on the Orpheum stage in the March installment of the Spectra Energy VSO’s Kids Koncerts series.

Talented and versatile singer, songwriter and performer Simone celebrates the life and music of her mother, musical icon and pioneer Nina Simone. She will perform classic tunes such as My Way, Easy As Life, How Long Must I Wander, Child In Me, and Feelin’ Good, with the VSO.

Passionate Spanish music then takes centre stage as Canadian classical guitarist Daniel Bolshoy performs Rodrigo’s extraordinary Concierto de Aranjuez. Rodrigo’s concerto contains, in its second movement, one of the most recognized and spine-tingling melodies ever penned – audiences never fail to swoon when it is played, and there are none better in Canada to perform this work than Daniel Bolshoy.

In his highly anticipated return to Vancouver, top Canadian musician Louis Lortie will conduct and perform the magnificent music of Bach, Mozart and Mendelssohn. Mr. Lortie makes his long-awaited return with the VSO in a conduct/play concert that sees him at the keyboard for Bach’s Concerto No. 5 in F minor, and Mozart’s Piano Concerto No. 21 – often referred to as ‘Elvira Madigan’ for the Swedish film that featured the concerto’s beautiful second movement.

Symphony at the Roundhouse sees the VSO and dance company Kokoro team up again for the Vancouver International Dance Festival.  This concert will feature the premiere of a collaborative work between Kokoro and Waterhole, a new Vancouver band with VSO Composer-in-Residence Scott Good.

The month comes to a close with the lush, brilliant melodies of Rachmaninoff’s magnificent Symphony No. 2 and an appearance by amazing young violinist Baiba Skride performing Prokofiev’s breathtaking Violin Concerto No. 1 in her VSO debut.
