Three Diamonds Shine Over Chef Daniel Boulud’s New db Bistro Moderne, Vancouver

January 28, 2010 - Vancouver, BC – Proprietors David and Manjy Sidoo and Daniel Boulud are extraordinarily pleased to announce that, db Bistro Moderne, Vancouver, has been awarded AAA/CAA’s prestigious ‘Three Diamond’ rating, just one year after the new restaurant opened its doors.

“We are just thrilled to be awarded three diamonds already,” says David Sidoo. “The rating validates the confidence that Daniel and Manjy and I had in the db Bistro concept for this market, and theenthusiasm with which our clients have embraced Daniel Boulud and Chef de Cuisine Stephane Istel. Daniel, Manjy and I wish to thank our outstanding restaurant team and our loyal clients, for an excellent first year.”

To receive an AAA/CAA (Triple A) Three Diamond rating a restaurant must meet specific criteria regarding the skill level and professionalism of Chefs and management, authentic mastery of traditional and contemporary cuisine, consistent delivery of an identifiable concept, individualized and refined service, restaurant comfort and décor, and overall packaging of a distinctive concept.

db Bistro Moderne, Vancouver, is a new, west coast interpretation of Daniel Boulud’s famous db Bistro Moderne in New York, but promises the same urban vibe, dynamic atmosphere, and modern French bistro cuisine as her east coast namesake. db Bistro Moderne is a contemporary Canadian bistro where traditional French cuisine meets the fresh-picked, just-caught flavours of British Columbia. Chefs Daniel Boulud and Stephane Istel offer a seasonal menu highlighting the quality of fine ingredients served in a convivial and casual setting.

Interior settings adapt the db Bistro Moderne New York experience – a contemporary spin on classic French bistro dining - to its new Vancouver setting, a city that marries sophistication with a relaxed, West Coast outdoors lifestyle. At the rear of the space is a 20-seat private dining room.

Chef de Cuisine Stephane Istel, a Daniel Boulud protégé from New York, reigns supreme in his Vancouver kitchen. Stephane’s Alsatian-inspired menus showcase Pacific Northwest ingredients, classic French techniques, and New York haute cuisine. The result is a truly contemporary French Bistro experience, unrivaled in the city. Classic French Bistro affairs like Jazz Nights and Wine Dinners transport guests to another place and time and overwhelm the senses with all that is fun and delicious.

Classical French dishes like Alsatian Pate en Croute, Coq au Vin, Charcuterie, Cassoulet de Toulouse, and Tarte Fine Provencal, are offered alongside an ever-changing menu of contemporary local dishes like Quadra Island Mussels served Espagnole, Seared Arctic Char, and Dungeness Crab Cakes. And of course, the famous ‘New York db Burger’ is a perennial favourite at db Bistro Moderne Vancouver.

For more information regarding db Bistro Moderne Vancouver visit the website at www.dbbistro.ca or call General Manager Chris González at 604.739.7115.

Vancouver Symphony Orchestra Extends Music Director’s Contract to 2015

Vancouver BC – The Vancouver Symphony Orchestra has announced a five-year extension of Bramwell Tovey’s contract as Music Director.  Maestro Tovey began his post as Music Director of the VSO in the year 2000; this extension will see him at the helm through the 2014-2015 Season. The continuation of this partnership will celebrate a significant period of artistic leadership for Tovey and the VSO, and provide continuity of vision and high artistic standards for Western Canada’s largest performing arts institution for years to come.

Bramwell Tovey is acknowledged around the world for his artistic depth and his warm, charismatic personality on the podium. Tovey’s career as a conductor is uniquely enhanced by his work as a composer and pianist, lending him a remarkable musical perspective. Bramwell Tovey’s career has skyrocketed during his tenure as VSO Music Director. He was appointed Principal Guest Conductor of the Los Angeles Philharmonic at the Hollywood Bowl, and is the founding host and conductor of the New York Philharmonic’s Summertime Classics series at Avery Fisher Hall. In addition to these prestigious engagements, he will appear in Melbourne as curator of the contemporary Metropolis Festival in Summer of 2010. Maestro Tovey is also a frequent guest conductor with many of the world’s major orchestras, a schedule that sees him perform in Asia, Europe, the United Kingdom, the USA and Canada with a growing list of engagements.

Maestro Bramwell Tovey commented, “I am very proud of the VSO’s accomplishments over the past ten years.  Working with such a dedicated ensemble of musicians has been a remarkably rewarding experience.  I am honoured and privileged to be continuing as the Vancouver Symphony Orchestra’s Music Director, and to have the opportunity to work with everyone in the organization to nurture this great Canadian orchestra and reach for even greater heights in the years to come.”

The VSO’s President & CEO Jeff Alexander says, “Bramwell has been an inspiration to the orchestra, the organization, the community and to me personally for the past ten years.  He has brought us all to new heights and we look forward with great anticipation to what the next five years will bring.”

Commenting on the importance of having a world-class talent at the helm of Vancouver’s orchestra, VSO Board Chair Art Willms remarks, “Vancouver is incredibly fortunate to be able to retain someone as talented as Maestro Tovey for the next five years. His accomplishments with the VSO over the past 10 years have been truly outstanding and we are so pleased that he will continue to lead this great orchestra.”

Maestro Tovey’s tenure with the Vancouver Symphony Orchestra has resulted in a number of remarkable artistic and financial achievements. Under the leadership of Maestro Tovey, President & CEO Jeff Alexander and Board Chair Art Willms, the orchestra has seen six consecutive seasons of surplus budgets; a tremendous achievement for any orchestra. During these years of financial stability, the orchestra has flourished artistically. In the last five years alone, the VSO, with Maestro Tovey, has recorded three albums; won a GRAMMY and JUNO award; conducted a successful tour in China, Korea and Macau; another successful tour to Toronto, Montreal, Ottawa and Quebec City; and domestic audiences have increased by nearly 25%. Maestro Tovey has also presided over impressive growth in the VSO’s Music Education programs, which now bring orchestral music into the lives of over sixty thousand students throughout the Lower Mainland. During his tenure, Maestro Tovey has conducted over four hundred concerts with the VSO in over twenty different venues, programmed the work of more than fifty Canadian composers, hired over a third of the current complement of the orchestra, and mentored three young Canadian conductors as Assistant Conductors with the orchestra.

Directly from the Molson Rickard’s Press Release:

Don’t be selfish this Valentine’s Day. It can’t be about you all the time. What about planning something special for your man?  Most men feel the pressure to do something unexpected for their partners on Valentine’s Day so why not turn things on their head and do something special for them?

Everyone knows that the key to a man’s heart really is his stomach…you can’t go wrong with giving him something to drink and eat.  Beer and food pairings are a big trend this year so take him through a sensual trio of food pairings that will explore the flavours of beer and texture. He will be very grateful. We promise.

A match made in heaven:  Impress your man by taking a dark beer and pair it with a dark chocolate.  Rickard’s Dark is a flavourful option that combines a smooth Porter taste with a hint of maple syrup.  The robust flavour of the Porter will bring out the rich cocoa flavours in dark chocolate. Select a bar with anywhere from 70 – 90% cocoa content, just keep in mind the higher the content the more bitter the chocolate.  Dark chocolate also contains theobromine which is a mild stimulant, so you can ensure your sweetheart’s senses are awake for the next pairing!

Now for something sweet:  Since you’ve experienced pairing bitter flavours and got a healthy fix of antioxidants from your dark chocolate, now move onto something sweet and sour.  In keeping with the beer theme why not take a wheat beer and pair it with tangy citrus, drizzled with honey.  White beers typically pair very well with citrus, in fact Rickard’s White has a hint of citrus that is excellent with oranges.  Honey is also a known aphrodisiac that provides the body with a natural boost of energy – enough said.

Red is for Valentine’s Day:  End your trio of pairings with something red, but not wine.  Take a red beer, such as Rickard’s Red and pair it with a creamy cheese.  The smooth roasted malt finish pairs well with chevre (goat cheese), mild blue cheese or buttery, earthy flavours like cow’s milk cheeses.  Encourage your loved to talk about the textures and buttery flavours, who know where the conversation will lead.

“R” MONTHS ARE SHUCKING, SUCKING, FINGER-LICKING GOOD TIMES

Cardero’s and The Sandbar Launch Fresh New Deal

(Vancouver, B.C.) – Cardero’s and The Sandbar restaurant together, announce the launch of the new Ohhh Oysters menu.  Starting this week and running to the end of March, the two waterfront restaurants will feature fresh Chef Creek and Village Bay Oysters paired with New Zealand Oyster Bay wines.

HOLD THAT TIGER WITH ‘GRRRREAT’ CHINESE NEW YEAR’S MENU

(Vancouver, BC) – Vancouverites are lucky people. If we want, we can start each year twice. Don’t like the first six weeks of 2010? Forget them - start all over again with the beginning of the Chinese New Year (4708) on February 13th! This year marks the Year of the Tiger. In Asian cultures tigers are revered as regal, courageous, loyal, self-assured, independent and passionate. In the west, the tiger is a familiar pop culture icon used to sell everything from gasoline to breakfast cereal (the Esso tiger, Kellogg’s Tony). Literature and the silver screen features many famous tigers(Shere Khan, the Bengal Tiger in Life of Pi) and of course there’s Hobbes in Calvin & Hobbes.

At Wild Rice, Andrew Wong and Chef Todd Bright ‘grabbed the tiger by the tail’ to bring patrons a modern take on the concept of a traditional Chinese New Year’s banquet. For Chinese New Year (February 13 – 28), Wild Rice will be offering a special four-course Year of the Tiger Menu for a value-priced $40 along with an optional matched flight of wines for an additional $20 per person.

The dinner starts with a deconstructed version of a popular dim sum dumpling – Sui Mai. Wild Rice’s Tiger Stripe Sui Mai features ‘stripes’ of crab and northern BC shrimp. The crab is considered a ‘yang element’ and good luck because it turns red when cooked. The delicate pink of the shrimp coupled with its sweetness is an additional wish for a ‘sweet year of good fortune.’ Up next is Wild Rice’s Tiger Roll featuring stripes of cloud ear mushrooms (black), red curry and tofu (orange) seductively displayed through a translucent rice wrap. The mushrooms are a homonym for ‘wishes fulfilled,’ tofu is one of the ingredients symbolic of ‘wealth.’

Tiger Beer-marinated Bison Flat Iron Steak forms the core of the menu. The accompanying Spicy Scallop Dumpling carries several meanings – its spiciness represents the fierceness of a tiger’s bite while the coin shape of the scallops conveys a wish for prosperity. The bicolour Ying Yang Gratin reminds us that balance is required for a happy life while the Chinese pickles add a slightly sour touch that heightens the flavours of the other components.

All Chinese banquets end on a sweet note to wish participants sweetness in the coming year. In this instance, Andrew Wong and Chef Bright chose to present a version of a sweet dumpling that is traditionally served in ginger soup at the end of a banquet. In this instance, the Lucky Nian Gao is a steamed sticky rice cake filled with a mixture of sweet red bean paste and almonds. The coin shape denotes ‘wealth’; the rice a symbol of ‘abundance.’ The filling also conveys good wishes. Red beans are particularly lucky in Chinese culture signifying both ‘good luck’ (red colour) and ‘abundance.’ The almonds are a symbol of ‘fertility’ – wishing that you be surrounded by many children and a large family. The cake is drizzled with anise syrup to reinforce its sweet wish and is accompanied by lucky lycee of white chocolate coins which completes the wish for a sweet year filled with good luck, prosperity and good health.

“At traditional New Year’s banquets, you are likely to see hard spirits served,” says Wild Rice owner Andrew Wong. “However, with Chinese New Year coinciding with the Olympics bringing a large influx of out-of-town visitors this year, I felt it was very important to highlight some of BC’s amazing wines by suggesting an optional wine pairing. Each has been carefully selected to complement the flavour profile of the course.” For those preferring a more traditional approach Wild Rice does offer several appropriately named cocktails including Double Happiness, Pink Pearl and Gin Sing along with a variety of cognacs and Scotches.

Now you can ‘put a tiger in your tank’ and enjoy a roaring good time from February 13 to 28 at Wild Rice. Tigger would approve.
